on the bright side of life.

I've had a tough week. Just feeling overwhelmed, and that I made a mistake moving here. But I took things into control, went to Disneyland (a happy vacation), and yesterday I finally sat down made a budget for the month, got my mailing list done, and found an audition. The cure to all things: take a step back and do something that makes you happy, even if it's unproductive, it'll help you breath.

On a happier note, while walking through the market I saw Mexican chorizo on sale and just had to get it for chorizo and eggs! I'm always trying to make the Mexican dishes my mom used to make us growing up, and I have yet to make this, one of the easiest meals! It's funny though, I used to hate this meal! I felt like every weekend we had it, and why couldnt they make potato and eggs (and I call myself a Mexican??). But now being away from home, I try to bring back all these from my past that I dont eat anymore.


Chorizo and Eggs

  • 1 package of Mexican chorizo 
  • 6-10 eggs 
  1. Cook chorizo in a large frying pan, breaking it up to small piece. Be careful, the liquid from the chorizo will bubble and it hurts if it hits you!
  2. When all broken apart (It'll look like more liquid than meat) about 5-10 min, start adding the eggs in one at a time, mixing it in. 
Make some tortillas and you're ready to go!

  1. Hi Sam, this is my first time to your food blog and it looks great! I love chorizo and eggs. You should try soyrizo sometime. It tastes really similar and is much healthier!
