cajeta.

This is like the best tasting caramel in the world. The first time I had it was in the form of Obleas, the mexican candy. I remember trying to savor those little candies, but before I knew it they had disappeared...
Luckily this past Thanksgiving at home my dad had a little container of cajeta, which was simply delicious, that he had gotten from a local store, or farm or something like that, so I took a picture of tiny list of ingredients and was off!
I scoured the web trying to find more and more recipes, 'cause the one on the container had corn syrup and I just hate using that icky stuff.

You need: 2 quarts of Goats Milk (32 oz), 2 cups of sugar, 1 tbsp vanilla, a cinnamon stick of 1/4 tsp cinnamon, and 1 tsp baking soda.

Add all but the baking soda.
Constantly stir and when it reaches boiling remove from heat and add the baking soda, STILL STIRRING! The baking soda will make everything go crazy! So make sure this is in a large pot, so you dont get a huge mess. Put back on a low heat, bring to a simmer and stir 'til its gooey and wonderful!

Its a fairly simple recipe, other than the you have to constantly stir for one hour. And dont scald the milk! But its so worth it!

Refridgerate to cool and enjoy! Its literally bomb on anything. I just like to eat it plain.
