simplicity can go a long way.

This past week has been filled with nothing but large restaurant dishes. My body is maxed out on large greasy foods. Plus yesterday I was craving pickles, so I walked to the market, came home, and proceeded to eat 4 of them...I instantly regretted it as the bathroom became my best friend. So I was in definite need of some healthy, light food.

 Luckily yesterday was the Farmers Market, and we got tomatoes, asparagus, pluots, white peaches, and beautiful smelling fresh basil. YUM! And so we made a simple Tomato and Mozzarella dish.





for 2 people
Ingredients: 
-2 Tomatoes, sliced
- Mozzarella cheese, sliced (as much as you want!)
- Fresh Basil, (I like mine chopped, but however you enjoy them)
- Olive Oil
- Salt and pepper

Just lay them however looks pleasing to you, and layer them: tomato, mozzarella, tomato, mozzarella, etc. 
Sprinkle salt and pepper, basil, and olive oil. ENJOY!
