apple galette.

8 years ago today I met Daniels mom for the first time, Daniel took me on our first official date to Chili's classy right?, we threw coasters in the back hallway very mature, and then he asked me out. I then proceeded to run to the dressing room and squeal with my girlfriends before going on to do "Guys and Dolls"

Recently I have been hardcore craving an apple pie, but I didnt want all that crust. Plus I really didnt want to make just a boring pie. So I went searching and found a recipe for Apple Galette. Remember when I made the Triple [berry] Galette? I remember it being so good, but a little tart for me.
Well this Apple Galette is beyond amazing. Just the apples themselves were good, I couldnt stop eating them out of the crust before I stuck it in the oven! This is also really easy to make!
Make the dough in a food processor and refridgerate!
Roll it out into a 14in diameter I wasnt even close!
Chop up the apple BE CAREFUL!
Mix the delicious apples with the lemon and sugar!
Pour and build a wall. And oven time!
It said to lay nicely, I just poured, all tasted the same and still looked nice!
See. Easy! We ate it that night and again cold in the morning, both tasted absolutly wonderful. Make it tonight! Make the dough, and while it is refridgerating make dinner! Then start your apples. Time management!

Apple Galette

ingredients
1 3/4 cups flour
1/4 tsp salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into small cubes
2 tablespoons (or more) ice water
1 1/2 pounds Granny Smith apples, peeled, cored, cut into 1/8-inch-thick slices
4 tablespoons sugar, divided
1 teaspoon finely grated lemon peel
1/4 cup apricot preserves
Whole milk

Preparation
Blend flour and salt in processor. Add butter and blend, using on/off turns, until mixture resembles coarse meal. Add 2 tablespoons ice water and blend just until dough begins to clump together, adding more ice water by teaspoonfuls if dough is dry I added quite a lot more. Gather dough into ball; flatten into disk. Wrap in plastic and chill 1 hour. This can all be made 2 days ahead. Keep dough chilled. Soften slightly at room temperature before rolling out.

When I took my dough out of the fridge it was kinda hard, but it made it super easy to roll out!Roll out dough between sheets of parchment paper I used aluminum foil! I dont have parchment paper to 1/8-inch-thick round, 14 inches in diameter about, mine was around 12-13inches! Remove top sheet of parchment. Transfer dough on parchment to the fridge and chill 15 minutes.

Preheat oven to 450°F. Combine apple slices, 2 tablespoons sugar, and lemon peel in medium bowl; toss to blend. **Before I put the apples on crust I smeared cinnamon all over the crust!** Arrange apple slices in concentric circles, overlapping slightly I did no such thing, just pile it in the middle. Using parchment as aid, fold plain crust border up over apples, pinching any cracks in crust. Brush crust with milk i didnt. Sprinkle crust edges and apples with remaining 2 tablespoons sugar and sprinkle cinnamon over the apples.

Bake galette 20 minutes. Reduce oven temperature to 375°F and continue baking until crust is golden, about 30 minutes longer. Remove from oven. Slide long thin knife between parchment and galette. Let stand at least 10 minutes. Cut into wedges and serve warm or at room temperature.
