rosemary-olive oil muffins.

Most of the food on my blog is desserts. I dont know if Ive ever mentioned this before, but I'm not a baker. I'm a terrible baker! Back in middle school (maybe 6th grade) I was in Home Ec and we had to bake cookies for the open house that night. In my kitchen everything was going well 'til we pulled out the cookies...They were ultra thin and burnt and tasted terrible. I remember crying 'cause we ruined them, and now my parents wont get cookies cause their child was a failure.
I guess a lot has changed. That or I just love baked goods that thats all I ever want to make! 

These were original supposed to be doughnuts, but I got to the part in the recipe where it said to pour into mini doughnut pans...haha yeah like I own that. So now they're muffins!

I got to use my mixer, finally!!! Its so beautiful, and like crazy quick and quite. I think I'm in love....
I couldve mixed it by hand but I just had to try my new mixer out! Look at it in action...

Back to the muffins! Pour them into a cupcake pan (or if your fancy into a doughnut pan) and bake!

I got this recipe from I think InStyle Magazine, by chef Waylynn Lucas. Its a healthy version of a doughnut, or 
fōnut as they like to call them. They are (each) 143 calories, 9g fat, 15g carbs, 2g protein, 81mg sodium. Compared to the normal doughnuts, thats great. And these taste amazing!!
Rosemary-Olive Oil Fōnut

Ingredients
  • cooking spray
  • 2 cups flour
  • 3/4 cup sugar
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup vegetable oil (or canola)
  • 1/2 cup olive oil
  • 2 tbsp chopped fresh rosemary (I used the rosemary in my spice rack, still totally good!)
  • juice from half a lemon (i didnt use!)
  • 1/4 cup pine nuts (I didnt use)
1. Preheat oven to 350 degrees. Lightly spray your pan with the cooking spray. In a large mixing bowl, combine flour, sugar, baking powder and salt. 

2. In a medium mixing bowl whisk together eggs, milk, oils, rosemary, lemon zest and juice. Make a will in the center of the dry ingredients and add wet ingredients. Mix until just combined (mixture will be lumpy)

3. Spoon batter into all slots of pan(s), 2/3 full. Bake (rotate pans half through-i didnt do this) for 10-12 min. If your doing the muffins they're more like 15-18 min. Or until golden brown.

4. I didnt do this part I just made icing with confectioners sugar, milk and vanilla. 
Meanwhile, in a spice mill or coffee grinder, pulse pine nuts until they form a powder, then place in a shallow pan. Turn doughnuts out of pan, lightly spray tops with cooking spray and dip into pine nut powder.
