stuffed tomatoes.

This weeks been really great (besides my not posting). I've finally gotten a really great book that I just cant put down! Plus I've been on my weekend the past 2 days that consisted of Disneyland, christmas tree shopping, and lots of nothing! Kinda helped that Daniel was out of town fri-sun so I was able to get all my house work done then and actually enjoyed my weekend!! The best.


The food today is amazing. I remember the first time I made this. I thought it would be a really nice side, but holy cow I had no idea it would taste this good. It also fit perfectly when I was on my diet I just didnt use such large tomatoes!

Slice your tomatoes in half.

Scoop out those insides!

Grate your bread, dice some garlic and spice it up! (its best if you through some greens as well!! I was out)

Stuff those tomatoes and bake.

I also tried this time adding goat cheese to 2 of them. That was really delicious as well!!

Stuffed Tomatoes

Ingredients                                                 
2 tomatoes
2 slices of bread
clove of garlic
garlic powder
onion powder
goat cheese (optional)
olive oil
(also add some basil!)

Julia Childs Ingredients
6 tomatoes
1-2 cloves of garlic
3 tbsp minced shallots
4 tbsp minced fresh basil or parsley
1/8 tsp thyme
salt and pepper
1/4 cup olive oil
1/2 cup crumbs from bread

1. Preheat oven to 400 degrees. 
2. Slice the tomatoes in half, and scoop out all the insides. Toss. Sprinkle with salt and pepper.
3. Grate your bread and add the spices and veggies. Mix and stuff into the tomatoes
4. Drizzle olive oil on top and bake for 10-15 min.
