BUT, I love cheese! And foods that are stuffed with cheese are normally the best food, ever. So why not stuff my boring chicken with some amazing goat cheese?! I also added some tomatoes to add veggies.
While you defrost your chicken, dice your tomatoes.
Cut a good size whole in the middle of you chicken (long way, so you have a deeper hole)
I had to just slice it in half like a hot dog bun 'cause I'm using the thighs and they're much smaller. I normally use the breast.
Lay down the cheese!
Smush the tomatoes in to the cheese.
Cook!
When you stuff it you want to alternate the cheese and tomatoes. The stuffing is better because you can put a lot more in it, and with every bite you taste everything!!
Add a tomato and goat cheese salad on the side, and you have one wonderful, healthy meal!!
Stuffed Chicken

Ingredients
2 chicken breasts
goat cheese
1 tomato
salt, pepper, paprika
- Preheat oven to 350.
- Dice you tomatoes.
- Cut holes into your chicken breast, with an opening at one end.
- Stuff with the cheese, then tomatoes, alternating until your chicken are completely stuffed.
- Sprinkle with salt, pepper, and paprika
- Wrap loosely with aluminum and cook 20-30 min, or until the chicken is completely baked.
A word of caution: sometimes the tomatoes make the chicken look slightly pink. So make sure you double check everything to avoid sickness or over cooking your chicken!
Tomato and Goat Cheese Salad
Ingredients
salad lettuce
diced tomatoes
goat cheese (crumbles are normally better for this)
balsamic vinegar.
Add to a bowl, and toss!
