meatloaf monday.

Happy August!! 

One more month 'til my birthday, and two months 'til the best time of the year: October and Halloween! Plus cooler weather. Cannot wait!

Secondly, hope everyone had a fantastic weekend. Sadly I worked for all of it, but at least I didnt have to work out yesterday!

So yesterday I made meatloaf for the first time! It's funny though, when I was little my mom would make this, and I used to hate it!
...Come to think of it, I dont know if I actually hated the food, or the name, or becuase that was the cool thing to do...

Hate Meatloaf.
Like, hating brussel sprouts.

But at one of my past jobs, they would sometimes serve meatloaf and it was one of the best meals they would have!



I used parts of  the recipe of the Barefoot Foodies Blog, and I had to improvise on a lot of it. But it still turned out delicious! I served with au gratin potates.

**now looking at the pictures, it doesnt look super appetizing, but it was SO good. Perhaps that why I didnt like it when I was a kid. It looked like a disgusting slab of meat! Oh well, it was sure tasty!**

Meatloaf
part by Barefoot Foodie 
and part by myself.

Ingredients
1 lb of ground chuck (for two people)
1 cup of rice crispies
1 egg
brown sugar
hot sauce
Worcestershire sauce
apple cider vinegar
paprika, chili powder, and garlic powder

  1. Pre-heat the oven to 350 degrees. 
  2. In a cup pour about (this was all eyballed! so use with caution) a tsp of hot sauce, 1/3 cup water, a tsp of Worcestershire and apple cider vinegar, around 2 1/2 tbsp brown sugar, and the spices
**I didnt have a sauce, so I created my own. Please use spices to your own liking!
  1. But ground chuck in a bowl, add the rice crispies, and egg. Sprinkle, just a little, some paprika, chili powder and garlic powder, and add about 1 tsp of brown sugar. Mix all around with your hands until it is all mixed thoroughly together
  2. Put the meat in baking dish,and drizzle the "sauce" onto the meat. 
    • Now at this point, since the "sauce" was just liquid, I mixed the meat some more in the liquid. The poured the liquid out 'cause I didnt want it to sit in it. And then formed the meat into a loaf. 
*If you have the sauce used in Barefoot Foodies blog, I would def use instead...but my version was still incredible. 
    • Let it cook for about an hour.
