cinnamon pull-apart breakfast rolls.

I wanted to bake something the other night but had no idea what. I wanted something simple but tasty, and to not have to go to the store to get missing ingredients. So I grab my Harry Potter Cookbook!

So many tasty treats in this book, it's seriously the best gift ever! Anyways, I ended up picking Cinnamon Pull-Apart Breakfast Rolls from the Chapter: Breakfast Before Class.

Harry Potter totally ate this meal! ...Oh guess not, I just read that Percy asked for these...
Well who cares about Percy. Lets just pretend Harry ate them.

They're pretty much plain cinnamon rolls. But because they come from Hogwarts they are totally awesome!

They look totally amazing right? They were so good! There was one problem. At the end of the recipe there was this sentence: "The rolls do not keep well and should be eaten within a few hours of being made"

WHAT?! 

I made these at like 11pm, and wanted them for breakfast. So I kept them in the baking dish, covered with aluminum foil and left in the kitchen. Next morning put some icing on, popped it in the microwave for 30 secs, and you know what...Still totally bomb!!! I recommend these to all! Put your apron on, and start your baking!

Cinnamon Pull-Apart Breakfast Rolls

Dough
1/4 cup warm water
1 tbsp active dry yeast
1 tbsp sugar
2/3 cup milk
1/2 stick (4tbsp) butter
1/2 tsp salt
2 lg eggs
1/3 cup sugar

Cinnamon Filling
1 tbsp butter, melted
1/4 cup packed brown sugar
1 tbsp cinnamon

Icing
1 cup confectioners' sugar, sifted
4 oz cream cheese
1 tbsp heavy cream
1/2 tsp vanilla

  1. Combine water, yeast, and 1 tbsp of sugar in a bowl. Set aside until puffy. Then heat the milk and butter in a saucepan or microwave (guess which one I used =D) Set aside.
  2. Whisk the flour, salt, and yeast in a large bowl. In another smaller bowl whisk the eggs and sugar together, then add the milk-butter mix. Mix into the flour mixture.
  3. Knead the dough until smooth and elastic (about 10 min). Place in an oiled bowl, turn to coat, then cover with plastic and set aside in a warm place for 1.5 to 2 hours.
  4. Roll the dough out into a 16"x12" rectangle (this did not happen for me, but turned out all the same and looked amazing). Then brush the tbsp of melted butter over the dough.
  5. Combine the brown sugar and cinnamon, and spread all over until within 1/2 in of the borders. Roll up the long side and cut off the messy ends. 
  6. Cut into slices (they said 12 rolls, but I had 6, maybe I cut too big?), lay in a greased pan and leave to rise 'til they are touching each other and the sides of the pan. Around 1.5 hours
  7. Preheat oven to 350, and bake for 20 min until golden brown.
  8. For the icing: beat all the ingredients until smooth, and drizzle over the rolls!

  1. Glad you took a chance and waited for breakfast. Wierd that they said had to be eaten right away-no storing time!
    Anyhow they do look tasty, thanks for sharing the recipe. I'll bet that is a neat cookbook.

  2. My husband and I are on a diet, so I won't be making these any time soon, thanks for the recipe. But...there's a bakery a few block from where I work, so I'm thinking I could just buy one and no will know that I cheated...LOL
